Cheesy Turkey Meatballs
Serves 2
Ingredients- 8 oz. lean ground turkey
- 2 Light Swiss Laughing Cow cheese wedges
- 1 T Mrs. Dash Italian seasoning
- 2 T onion; chopped
- Salt and pepper
- 2 T egg whites (optional)
- 2 T Italian bread crumbs (optional)
- Preheat the oven to 375 degrees F and line a baking sheet with foil and spray it with nonstick cooking spray
- Mix together the turkey, Italian seasoning, onion, salt and pepper, egg whites (optional) and bread crumbs (optional) until fully combined
- Divide the meatball mixture into 6 even portions
- Flatten the portions into disk shapes
- Divide the cheese into 6 even portions
- Place a piece of cheese in the middle of each meatball disk and roll the meat around the cheese to "close" it, ensuring none of the cheese is exposed
- Place the meatballs on the baking sheet and bake for 20 minutes or until cooked through
- Serve over zoodles with pasta sauce
