White Chocolate Peppermint Fudge
Ingredients
- 1 12oz. bag of quality white chocolate
- 1 16oz. container of vanilla frosting
- 1/2 t peppermint extract
- 2 T crushed candy canes
- 7-10 drops red food coloring
- Cooking spray
- Line a 9" square baking dish with foil, so the foil hangs over the outside edges
- Spray the foil with cooking spray
- In a microwave safe bowl, melt the white chocolate in 30 second increments; stirring in between increment, until completely melted and smooth
- Stir in the vanilla frosting and peppermint extract
- Evenly spread the mix into the baking dish
- Drop the food coloring evenly spaced on top of the fudge
- With a knife or tooth pick, swirl the food coloring around
- Sprinkle and lightly "set" the crushed candy canes over the fudge
- Refrigerate for at least 1 hour before cutting into evenly sized pieces
