Sun-Dried Tomato Grilled Chicken

Here's a chicken marinade that will WOW anybody you serve it to!  They'll think you spent hours slaving over the stove to create the rich flavors, when, in fact, it takes about 2 minutes to prepare.  I can't get enough of this recipe.  With each bit you really can taste each ingredient coming through on your pallet.  Serve this at your next dinner party and your guests definitely be impressed!
 
Sun-Dried Tomato Grilled Chicken 
Makes 4 servings 
Ingredients 
  • 1/2 cup red wine 
  • 1/2 cup sun dried tomatoes, drained 
  • 1/4 cup fresh basil leaves 
  • 3 T olive oil  
  • 4 cloves garlic, chopped 
  • 2 t fresh ground black pepper 
  • 1 t salt 
  • A few sprigs of parsley (optional) 
  • 4 small chicken breasts 
Directions 
  1. Combine the wine, tomatoes, basil, olive oil, garlic, pepper, and salt in a blender until smooth 
  2. Marinate the mixture with the chicken overnight in the refrigerator 
  3. Grill about 6-8 minutes on each side until the chicken is cooked through
  4. Garnish with fresh parsley
Note: If you don't have time to let the chicken marinate overnight, I suggest preparing the marinade and baking the chicken at 350 degrees F for about 25-30 minutes or until cooked through.
