Apricot Lemon Baked Chicken
Serves 2
Ingredients- 8 oz. boneless, skinless chicken breast
- 1 lemon; sliced
- 1-2 T sugar free apricot preserve
- 1/2 t dried rosemary
- Marinate the chicken with the lemon slices and apricot preserve for 1-4 hours
- Preheat an oven to 375 degrees F
- Remove the lemon slices and place then on a baking sheet
- Layer the chicken on top of the lemon slices
- Scoop out the apricot preserve and layer it onto the chicken
- Sprinkle the chicken with rosemary
- Bake for 25-30 minutes or until the chicken is cooked through
