Homemade Granola

As you're aware, I have a love for oats.  Therefore, it's only fitting that I share with you a homemade granola recipe.  I love homemade granola because it allows me to control the flavors and added sugar as well as combine healthy proteins, fibers, and carbohydrates into one packed snack.  Besides adding granola to my yogurt, I've found that it's delicious to create clean fruit crisps.  The one that I'm about to share was so delicious I was basically licking the plate to indulge in every bit of tasty goodness!


Cranberry Honey Granola
makes approximately 3 cups
Ingredients
  • 1/2 cup slivered almonds
  • 2 cups rolled oats
  • 2 T chia seeds
  • 1/2 t ground ginger
  • 2 t ground cinnamon
  • 2 T local honey
  • 2 t virgin coconut oil; melted
  • 1/2 cup dried cranberries, fruit juice sweetened is best
Directions
  1. Preheat oven to 300 degrees F
  2. Mix all ingredients together in a mixing bowl, except the cranberries
  3. Spread the mixture evenly onto an ungreased cookie sheet
  4. Bake for 30 minutes, shaking and turning the pan every 10 minutes, or until golden brown
  5. Remove from the oven and stir in the cranberries
 


Grilled Peach Crisp
  Ingredients
  • 1 peach, pitted and cut in half
  • 2 T Greek Yogurt
  • 1 T Raisin Honey Granola
  • 1/2 t local honey
  • 1/4 t cinnamon
Directions
  1. Preheat a grill to medium/high heat
  2. Spray the grill grate with healthy cooking spray
  3. Place the peach on the  grill grate and cook for 10 minutes, flipping half way
  4. Once softened, top the peach slices with yogurt and granola then drizzle with honey and sprinkle with cinnamon
