Cranberry Honey Granola
Ingredients
- 1/2 cup slivered almonds
- 2 cups rolled oats
- 2 T chia seeds
- 1/2 t ground ginger
- 2 t ground cinnamon
- 2 T local honey
- 2 t virgin coconut oil; melted
- 1/2 cup dried cranberries, fruit juice sweetened is best
- Preheat oven to 300 degrees F
- Mix all ingredients together in a mixing bowl, except the cranberries
- Spread the mixture evenly onto an ungreased cookie sheet
- Bake for 30 minutes, shaking and turning the pan every 10 minutes, or until golden brown
- Remove from the oven and stir in the cranberries
- 1 peach, pitted and cut in half
- 2 T Greek Yogurt
- 1 T Raisin Honey Granola
- 1/2 t local honey
- 1/4 t cinnamon
Directions
- Preheat a grill to medium/high heat
- Spray the grill grate with healthy cooking spray
- Place the peach on the grill grate and cook for 10 minutes, flipping half way
- Once softened, top the peach slices with yogurt and granola then drizzle with honey and sprinkle with cinnamon
