Gourmet Avocado Grilled Cheese

I don't normally eat sandwiches, let alone grilled cheese, but I needed a change from my usual salad lunch.  I had to make do with what I had fresh in the fridge, and came up with this creamy grown-up version of the traditional sandwich!
Gourmet Avocado Grilled Cheese
  • 2 pieces of Ezekiel 4:9 sprouted grain bread
  • 2 T goat cheese
  • 1/2 of an avocado; thinly sliced
  • 1/2 cup baby spinach leaves
  • Salt and pepper to taste
  1. Arrange all ingredient between the bread
  2. Cook on a hot skillet until the bread is brown and the cheese is melted
