Sweet Chili Glazed Tofu

I'm always in search of new meatless Monday recipes and this tofu recipe is one of my favorite options.  Tofu is fast and easy to cook.  As long as you squeeze all of the water out of it, it will absorb any new liquid marinade that is added to it so it always has great flavor!


Sweet Chili Glazed Tofu
Serves 4
Ingredients

  • 1 package extra firm tofu, drained
  • 1 t olive oil
  • 3 cloves garlic, minced
  • 1 T fresh ginger, grated
  • 1/2 t chili flakes
  • 2 T maple syrup
  • 2 T low-sodium soy sauce
  • 1 T lime juice
Directions
  1. Pat tofu dry and cut the block into 8 even sized triangles
  2. In a skillet over medium-high heat, add the oil and sauté the tofu until browned on both sides
  3. Reduce the heat to medium-low and add the garlic, ginger, and chili; sauté for 5 minutes
  4. Add the maple syrup, soy sauce, and lime juice; cover and cook until the liquid has evaporated
  5. Serve over a bed of sauteed kale
