Mac & Cheese Muffins
Makes 48 mini muffins or 24 regular muffins
Ingredients- 1 lb. elbow macaroni
- 1/4 cup butter
- 1/4 cup flour
- 2 cups of milk
- 2 cups cheese of choice (I used American and
- Mozzarella)
- 1 egg white and 1 egg
- Salt and pepper to taste
- Cooked meats or veggies (optional)
- Cooking Spray
- Preheat an oven to 400 degrees F and spray muffin tins with cooking spray
- Cook pasta according to package directions
- While pasta is cooking, whisk together the butter and flour in a small sauce pan over medium-high heat until fully incorporated
- Add in the milk and cheese and whisk until the cheese is fully melted
- Whisk in the eggs and season with salt and pepper
- Drain the pasta and return it to the cooking pot
- Add any additional cooked meats or vegetables to the noodles
- Pour the cheese sauce over the noodles and stir to combine
- Portion the mac and cheese out into the muffin tins
- Bake for about 10-12 minutes until the tops are slightly brown
- Remove from the oven and let cool for about 10 minutes before removing from the muffin tins
