Mac & Cheese Muffins

Looking for your next game day recipe.  Beware there is nothing clean or healthy about these, but they're the perfect appetizer for the man in your life.  These Mac and Cheese Muffin Cupcakes are not only the perfect addition to your Man Food Menu, but they're also great to include in your on-the-go week day lunch.

Mac & Cheese Muffins
 Makes 48 mini muffins or 24 regular muffins
  • 1 lb. elbow macaroni
  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cups of milk
  • 2 cups cheese of choice (I used American and
  • Mozzarella)
  • 1 egg white and 1 egg 
  • Salt and pepper to taste
  • Cooked meats or veggies (optional)
  • Cooking Spray
  1. Preheat an oven to 400 degrees F and spray muffin tins with cooking spray
  2. Cook pasta according to package directions
  3. While pasta is cooking, whisk together the butter and flour in a small sauce pan over medium-high heat until fully incorporated
  4. Add in the milk and cheese and whisk until the cheese is fully melted
  5. Whisk in the eggs and season with salt and pepper
  6. Drain the pasta and return it to the cooking pot
  7. Add any additional cooked meats or vegetables to the noodles
  8. Pour the cheese sauce over the noodles and stir to combine
  9. Portion the mac and cheese out into the muffin tins
  10. Bake for about 10-12 minutes until the tops are slightly brown
  11. Remove from the oven and let cool for about 10 minutes before removing from the muffin tins
