Homemade Taco Seasoning
2T = 1 packet
Ingredients- 2 T chili powder
- 2 t oregano
- 1 t paprika
- 1 t ground cumin
- 1 t onion powder
- 1/2 t garlic powder
- 1/4 t salt
- 1/4 t ground pepper
- 1/2 t cayenne pepper or red pepper flakes
- Stir together all of the above seasonings in a glass jar
- Store jar in a dark, cool place
Note: I triple the recipe and store the remainder with my spices so I always have some on hand.
Turkey and Quinoa Taco Bowl
Serves 4
Ingredients- 1/4 - 1/2 lb. 93% lean ground turkey
- 3/4 cup cooked quinoa
- 1 bell pepper, chopped
- 1/2 onion, finely chopped
- 1/2 tomato; diced
- 1/2 avocado; diced
- 1/4 jalapeno pepper; diced
- 1 1/2 T Homemade Taco Seasoning
- 1 T olive oil
- Cooking spray
- Shredded Cheese
- Cilantro
- Greek yogurt
- Salsa
- Preheat oven to 350 degrees F and spray 4 ramekins with cooking spray
- Heat a medium skillet over medium-high heat
- Add the olive oil and saute the onions until lightly browned
- Add the ground turkey and cook until almost fully cooked
- Mix in the remaining ingredients
- Divide the mixture into the 2 ramekins and sprinkle with cheese (optional)
- Bake for 10 minutes to allow all of the ingredients to finish cooking
- Serve with your favorite toppings
