Triple Chocolate
Chip Pudding Cookies
Makes 48 Cookies
Ingredients
- 3/4 cup unsalted butter; at room temperature
- 1/4 cup sugar (2 T sugar/stevia blend)
- 3/4 cup brown sugar
- 1 (3.4 oz.) box sugar-free chocolate fudge instant pudding mix
- 2 eggs
- 1 t vanilla
- 2 1/4 cups whole wheat pastry flour
- 1 t baking soda
- 1/4 t salt
- 1/2 cup white chocolate chips
- 1/2 cup semi-sweet chocolate chips
- Preheat oven to 350 degrees F and line a baking sheet with parchment paper
- Stir together flour salt, and baking soda; set aside
- In a large bowl, cream butter and sugars together
- Add in pudding package and beat until well blended
- Add eggs and vanilla
- Add flour mixture slowly until well incorporated.
- Stir in the chocolate chips
- Roll the dough into 1″ balls
- Bake for 9-12 minutes
- Allow cookies to cool on the baking sheet for 3 minutes before transferring them to a wire rack
- Store in an airtight container for up to 1 week
