Cajun Flounder with Tomatoes


In need of quick but flavorful weeknight dinner idea?  This simple dish combines transforms basic ingredients into a flavor and heat packed entree that can be whipped up in less than 30 minutes!

Cajun Flounder with Tomatoes
Serves 4
Ingredients
  • 1 t olive oil
  • 4 6 oz. pieces flounder fillets
  • 3/4 cup onion, chopped
  • 2 cloves garlic, minced
  • 3/4 cup diced green bell pepper
  • 1 14 oz. can of no salt added diced tomatoes
  • 1 T Cajun spice seasoning
  • 1 t parsley + more for garnishing
Directions
  1. Sauté the onions and garlic with the olive oil on medium-high heat until soft; about 3 minutes
  2. Add the tomatoes, peppers and spices and cook until the peppers are soft; about 2-3 minutes
  3. Place the fish over the tomato mixture, cover, and cook on medium-low until fish flakes easily; about 12-15
  4. Serve over cauliflower “rice” or rice and garnish with additional parsley
