Cajun Flounder
with Tomatoes
Serves 4
Ingredients
- 1 t olive oil
- 4 6 oz. pieces flounder fillets
- 3/4 cup onion, chopped
- 2 cloves garlic, minced
- 3/4 cup diced green bell pepper
- 1 14 oz. can of no salt added diced tomatoes
- 1 T Cajun spice seasoning
- 1 t parsley + more for garnishing
Directions
- Sauté the onions and garlic with the olive oil on medium-high heat until soft; about 3 minutes
- Add the tomatoes, peppers and spices and cook until the peppers are soft; about 2-3 minutes
- Place the fish over the tomato mixture, cover, and cook on medium-low until fish flakes easily; about 12-15
- Serve over cauliflower “rice” or rice and garnish with additional parsley
