Broccoli and "Cheese" Soup

After a busy weekend, it was nice to sit down and enjoy this nice bowl of soup.  I kicked up the flavor a bit by adding some chili powder which was a nice addition, but feel free to add your own spicey twist to this remade comfort soup!

Broccoli and "Cheese" Soup
Serves: 2
Calories per Serving: 175
Fat: 6.9g - Carbs: 22.1g - Fiber: 8.5g - Protein: 11.9g

Ingredients
  • 1 cup low sodium chicken broth
  • 1 cup unsweetened almond milk
  • 3 cloves of garlic, minced
  • Salt and pepper to taste
  • 6 T "cheese"
    • 3 T nutritional yeast
    • 1 T Greek yogurt based butter or oil
    • 2 T oats; ground into flour
  • 2 cups broccoli; chopped
  • 1/2 t chili powder
Directions
  1. Over medium-high heat, bring the milk, garlic, broccoli, and salt and pepper to a boil
  2. Boil for about 15 minutes
  3. Add the butter/oil
  4. Whisk in the nutritional yeast and oat flour
  5. Allow to cook for 5 more minutes
  6. Garnish with chili powder
