Hummus Baked Chicken

It doesn't always require fancy ingredients and lots of time to prepare a good dinner.  I love making this dish so much because it's so versatile.  With the abundant number of hummus flavors on the market, you can recycle this recipe and never have the same results.  You can also spice it up even more by adding additional ingredients such as roasted peppers, sun-dried tomatoes, olives, cheese, etc.

Hummus Baked Chicken
 Serves 2

  • 8-10 oz. thin strip chicken breasts
  • 2-4 T hummus flavor of choice (I used 40 Spices by Tribe)
  • Salt and pepper to taste (optional)
  1. Preheat oven to 350 degrees F
  2. Arrange the chicken on a baking sheet
  3. Spread a thin layer of hummus on each chicken breast
  4. Season with salt and pepper or additional toppings 
  5. Bake for 12-15 minutes or until the chicken is cooked through (I used very thin strips of chicken so my cooking time was very short)
