Rosemary Balsamic Chicken

I had no ideas when I whipped up this dinner how delicious it would be.   Sometimes the most basic ingredients, when combined together, create amazing flavors.  This dish is the perfect example.  I served this over spiralized carrots to complete my dish.

Rosemary Balsamic Chicken

Serves 2
  •  8 oz. thinly sliced chicken breasts
  • 1/2 cup celery; diced
  • 1/2 cup onion; chopped
  • 2 T balsamic vinegar
  • 2 t dried rosemary
  • Salt and pepper to taste
  1.  In a medium skillet, over medium-high heat, saute the onions and celery until lightly browned
  2. Once browned, add the chicken and allow it cook until almost fully cooked
  3. Add in the balsamic vinegar, rosemary, and salt and pepper
  4. Continue cooking until the chicken is fully cooked
  5. Serve as desired
