Vanilla Protein Pancakes with Eggnog Cream

IngredientsPancakes
- 1 scoop vanilla whey protein powder
- 1 T coconut flour
- 1/2 t baking powder
- 3 T vanilla unsweetened almond milk
- 1/4 cup plain Greek yogurt
- 2 egg whites
- 1/4 t vanilla extract
- 2 T plain Greek yogurt
- 1 T vanilla unsweetened almond milk
- 1/4 t rum extract
- 1/4 t vanilla extract
- 7-10 liquid stevia drops
- 1/4 t ginger
- 1 T Walden Farms pancake syrup
- Combine all of the Eggnog Cream ingredients; set aside
- Blend together all of the pancakes ingredients
- Heat a griddle to medium-high heat
- Spoon out 4-6 equal portions onto the surface; working in batched if necessary
- Cook until the pancakes start to bubble then flip and continue cooking until both sides are golden brown
- Drizzle with Eggnog Cream and pancake syrup
