Cheesy Turkey Meatballs

Cheesy Turkey Meatballs
Serves 2
  • 8 oz. lean ground turkey
  • 2 Light Swiss Laughing Cow cheese wedges
  • 1 T Mrs. Dash Italian seasoning
  • 2 T onion; chopped
  • Salt and pepper
  • 2 T egg whites (optional)
  • 2 T Italian bread crumbs (optional)
  1. Preheat the oven to 375 degrees F and line a baking sheet with foil and spray it with nonstick cooking spray
  2. Mix together the turkey, Italian seasoning, onion, salt and pepper, egg whites (optional) and bread crumbs (optional) until fully combined
  3. Divide the meatball mixture into 6 even portions
  4. Flatten the portions into disk shapes
  5. Divide the cheese into 6 even portions
  6. Place a piece of cheese in the middle of each meatball disk and roll the meat around the cheese to "close" it, ensuring none of the cheese is exposed
  7. Place the meatballs on the baking sheet and bake for 20 minutes or until cooked through
  8. Serve over zoodles with pasta sauce
