Sesame Ginger Quinoa Bowl

My lunches lately have consisted of this tasty bowl.  It's quick to prepare, packed with nutrients, and very filling.

Sesame Ginger Quinoa Bowl
Serves  5
Ingredients
  • 1 1/4 cup uncooked quinoa 
  • 1 cup edamame 
  • 15 baby carrots, chopped
  • 1 bell pepper; diced
  • 1 1/2 cups cabbage, chopped
  • 2 t ginger 
  • 3 T rice vinegar 
  • 2 T sesame seed oil
Directions
  1. Cook quinoa according to package directions
  2. Once the quinoa is cooked, add the edamame, carrots, pepper, and cabbage
  3. In a separate bowl, mix together the ginger, vinegar, and sesame seed oil
  4. Mix in the the dressing onto the quinoa
  5. Serve hot or cold
