Sesame Ginger Quinoa Bowl
Serves 5
Ingredients - 1 1/4 cup uncooked quinoa
- 1 cup edamame
- 15 baby carrots, chopped
- 1 bell pepper; diced
- 1 1/2 cups cabbage, chopped
- 2 t ginger
- 3 T rice vinegar
- 2 T sesame seed oil
- Cook quinoa according to package directions
- Once the quinoa is cooked, add the edamame, carrots, pepper, and cabbage
- In a separate bowl, mix together the ginger, vinegar, and sesame seed oil
- Mix in the the dressing onto the quinoa
- Serve hot or cold
