Bisquick Chocolate Chip Cookies

From time to time Michael will for a sweet treat.  I take advantage of this by trying out new cookie recipes.  This recipe is defiantly a keeper!  I loved how the cookies were light and fluffy.  Their consistency was very similar to my pudding cookies and they turned out equally as moist.  Needless to say, they didn't last very long!


Bisquick Chocolate Chip Cookies
makes about 3 dozen cookies
Ingredients
  • 1/2 cup butter, softened
  • 1 cup light brown sugar, packed
  • 2 t vanilla
  • 1 egg
  • 2 3/4 cups Bisquick baking mix
  • 1 cup semi-sweet chocolate chips
  • 1 cup peanut butter M&M's
Directions
  1. Preheat oven to 375 degrees F
  2. In large bowl, mix butter, sugar, vanilla and egg
  3. Stir in Bisquick mix and chocolate chips
  4. Drop dough by rounded teaspoonfuls onto an ungreased cookie sheet, about 2" apart
  5. Top each cookie with 3 peanut butter M&M's
  6. Bake for 8-10 minutes or until golden brown
  7. Transfer to a cooling rack to cool
Of course you could substitute the peanut butter M&M's for another preferred candy, but we happen to love peanut butter!
