Chili Pumpkin Turkey Burgers

I know it's the middle of summer and most people aren't thinking about pumpkins, but I've seen so many people raving about this Chili Pumpkin Turkey Meatloaf recipe from The Coconut Diaries!  I knew that I had to try it, so I decided to make this recipe summer-friendly by making burgers instead of meatloaf.


Chili Pumpkin Turkey Burgers
 serves: 3
Ingredients
  • 1/2 lb of raw 97% lean ground turkey
  • 1/3 cup of raw old fashioned rolled oats
  • 1/4 cup pumpkin purée
  • 1 egg whites
  • 1 t chili powder
  • 1 t cinnamon
  • 1 t pumpkin pie spice
  • 3 sandwich thins buns
  • Dijon mustard
Directions
Burgers 
  1. Preheat the grill to medium-high
  2. Mix all of the ingredients together in a bowl
  3. Form into 3 patties
  4. Grill for about 6-8 minutes on each side until cooked through
  5. Enjoy topped with Dijon mustard
Meatloaf
  1. Preheat the oven to 350 degrees F and spray a loaf pan with nonstick spray
  2. Mix all of the ingredients together in a bowl
  3. Transfer the meat to the loaf pan
  4. Bake for 25 minutes or until cooked through and the top is slightly crispy
 Like I've said with some of my other recipes, don't knock it until you try it!
