Smoothie Obsession

I've been on a smoothie kick lately and enjoy trying all these new creations.  I think it's partially because there's so much fresh fruit available that I end up buying more than I can normally eat for snacks.  Instead of letting it go to waste, I've begun making these tasty creations since they're a great way to pack a lot of fruits and veggies into a healthy breakfast or snack.


Peach Mango Paradise Smoothie 
Smoothie Ingredients
  • 2/3 cup coconut water
  • 1 T chia seeds
  • 1/4 t xanthan gum (optional for thickness)
  •  1 peach
  • 1/2 mango
  • 1/4 t cinnamon 
Toppings
  • goji berries
  • additional cinnamon
  • peach slice
  • strawberry
Directions
  1. Combine all of the smoothie ingredients in a high speed blender in the order listed above
  2. Blend until thick and smooth
  3. Top with desired toppings

Pineapple Kiwi Green Smoothie
Ingredients
  • 1 cup coconut water
  • 1 T chia seeds
  • 2 celery stalks; diced
  • 1/2 cup frozen pineapple chunks 
  • 1 kiwi
  • goji berries
Directions
  1. Combine all of the smoothie ingredients (except the goji berries) in a high speed blender in the order listed above
  2. Blend until smooth
  3. Top with desired toppings
