I've been on a smoothie kick lately and enjoy trying all these new creations. I think it's partially because there's so much fresh fruit available that I end up buying more than I can normally eat for snacks. Instead of letting it go to waste, I've begun making these tasty creations since they're a great way to pack a lot of fruits and veggies into a healthy breakfast or snack.
Peach Mango Paradise Smoothie
Smoothie Ingredients
- 2/3 cup coconut water
- 1 T chia seeds
- 1/4 t xanthan gum (optional for thickness)
- 1 peach
- 1/2 mango
- 1/4 t cinnamon
Toppings
- goji berries
- additional cinnamon
- peach slice
- strawberry
Directions
- Combine all of the smoothie ingredients in a high speed blender in the order listed above
- Blend until thick and smooth
- Top with desired toppings
Pineapple Kiwi Green Smoothie
Ingredients
- 1 cup coconut water
- 1 T chia seeds
- 2 celery stalks; diced
- 1/2 cup frozen pineapple chunks
- 1 kiwi
- goji berries
Directions
- Combine all of the smoothie ingredients (except the goji berries) in a high speed blender in the order listed above
- Blend until smooth
- Top with desired toppings
