Butter Chip Fudge Brownies

Ingredients
- 1/2 cup whole wheat pastry flour
- 1/4 cup unsweetened cocoa powder
- 1/2 cup Truvia Baking Blend with Sugar
- 1/4 t baking powder
- 1/8 t salt
- 1 egg white
- 1/2 cup pumpkin
- 2 T unsweetened vanilla almond milk
- 1 T local honey
- 1 T extra virgin olive oil or coconut oil (melted)
- 4 T peanut butter chips (reserve 1 T for baking)
Directions
- Preheat oven to 350 degrees F and line an 8×8 inch baking dish with parchment paper
- Combine all of the dry ingredients in a bowl
- In a separate bowl combine pumpkin, egg, oil, almond milk, and honey
- Pour liquid ingredients into dry ingredients and stir well
- Pour into an 8×8 in pan and bake for 20 minutes
- Add additional 1 T of peanut butter chips
- Continue baking for 5 minutes; brownies will look undercooked
- Allow to cool for about 30-40 minutes before cutting
