Peanut Butter Chip Fudge Brownies

I was craving something chocolatey and fudgey.  Then I saw this brownie recipe!  It was like a calling from heaven.  Fudge, chocolate, AND peanut butter - what more could a girl love when she's having a sweet craving!


Peanut Butter Chip Fudge Brownies
Makes 9 Brownies
Calories per Brownie: 123
Fat: 4g - Carbs: 18.4g - Fiber: 1.9g - Protein: 3.1g

Ingredients
  • 1/2 cup whole wheat pastry flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup Truvia Baking Blend with Sugar
  • 1/4 t baking powder
  • 1/8 t salt
  • 1 egg white
  • 1/2 cup pumpkin
  • 2 T unsweetened vanilla almond milk
  • 1 T local honey
  • 1 T extra virgin olive oil or coconut oil (melted)
  • 4 T peanut butter chips (reserve 1 T for baking)
Directions
  1. Preheat oven to 350 degrees F and line an 8×8 inch baking dish with parchment paper
  2. Combine all of the dry ingredients in a bowl
  3. In a separate bowl combine pumpkin, egg, oil, almond milk, and honey
  4. Pour liquid ingredients into dry ingredients and stir well
  5. Pour into an 8×8 in pan and bake for 20 minutes
  6. Add additional 1 T of peanut butter chips
  7. Continue baking for 5 minutes; brownies will look undercooked
  8. Allow to cool for about 30-40 minutes before cutting
