Muffin
Ingredients
- 1 1/4 cup oats; ground into flour
- 2 scoops cinnamon swirl whey
- 1 T coconut flour
- 1 t baking powder
- 2 stevia packets (add more if you want a sweeter muffin)
- 1 1/4 cup pumpkin puree
- 4 egg whites
- 1/3 cup unsweetened vanilla almond milk

Swirl Ingredients
- 1/4 cup sugar free pancake syrup (Walden Farms)
- 2 t cinnamon
Directions
- Preheat the oven to 350 degrees F and spray 12 muffin tins with cooking spray
- Add all of the ingredients to a high speed blender and blend until smooth and fully combined
- Pour the batter into the muffin tins
- In a small bowl, combine the cinnamon and pancake syrup
- Swirl a little of the syrup onto each muffin
- Bake for 15-18 minutes or until a toothpick comes out clean
- I store these in the refrigerator and microwave them for 1 minute before eating
