White Chocolate Peppermint Fudge

It's the season of giving, so I'm sharing with you a recipe that's sure to WOW any party crowd.  This fudge is perfect for large gatherings, an addition to any cookie platter, or as an after dinner minty treat!

White Chocolate Peppermint Fudge

Ingredients
  • 1 12oz. bag of quality white chocolate
  • 1 16oz. container of vanilla frosting
  • 1/2 t peppermint extract
  • 2 T crushed candy canes
  • 7-10 drops red food coloring
  • Cooking spray
Directions
  1. Line a 9" square baking dish with foil, so the foil hangs over the outside edges
  2. Spray the foil with cooking spray
  3. In a microwave safe bowl, melt the white chocolate in 30 second increments; stirring in between increment, until completely melted and smooth
  4. Stir in the vanilla frosting and peppermint extract
  5. Evenly spread the mix into the baking dish
  6. Drop the food coloring evenly spaced on top of the fudge
  7. With a knife or tooth pick, swirl the food coloring around
  8. Sprinkle and lightly "set" the crushed candy canes over the fudge
  9. Refrigerate for at least 1 hour before cutting into evenly sized pieces
